Kitten’s Italian Parmesan Meatballs

Plan ahead the beef mixture needs to be chilled for at least 6-24 hours before shaping and cooking, or you may shape into meatballs and then refrigerate which ever works the best for you
Servings 6-8
INGREDIENTS:
1 pound ground beef
1/2 pound ground pork (or use all beef)
2 large eggs, slightly beaten
1/2 cup freshly grated Parmesan cheese
1/3 cup dry breadcrumbs —– don’t have dry breadcrumbs? soak 3 slices white sandwhich bread in the 1/3 cup of milk until soft
4 large garlic cloves, finely chopped (garlic lovers can use more)
1/3 cup milk
1 teaspoon dried oregano (optional)
3 tablespoons dried parsley
1-1/2 to 2 teaspoons seasoned salt
1 teaspoon fresh ground black pepper (can use more or less)
INSTRUCTIONS:—————————————————-
In a bowl mix all ingredients together using clean hands until well combined adding in a little more bread crumbs if needed to hold together; cover and refrigerate for at least 6 hours or 24 hours.
Shape into small balls.
Drop the balls into simmering pasta sauce and do not stir for at least 20 minutes or you will risk breaking apart.
Continue cooking the meatballs in the sauce for at least 40 minutes or more.
NOTE: you may also bake the meatballs in a 350 degree F oven for 25 minutes.

These were absolutely fabulous. My husband who is a picky eater trenched these down. I made them into big meatballs and started them in a little butter and oil in the skillet and finished in the oven; put them in sauce and served over spaghetti. Meatball subs for left overs tonight!!

I just made these meatballs with some spaghetti sauce. Absolutely amazing!!!! I dropped them in the sauce and cooked exactly like Kitten states in this recipe. I am currently making Kitten’s French bread to go with the spaghetti. I am probably going to make Kitten’s garlic bread out of the French bread. It will be an Italian Kitten night!! I made these with both beef and chicken mince and absolutely loved both the batches. I keep a generous amount frozen and have used these with excellent results in subs, pizzas and casseroles. I steamed them before frying to keep the shape intact as boiling them in the sauce made the beef ones shrink considerably. Thank you for the great recipe.
Want to add my “thumbs up” to this recipe. It’s my “go to” meatballs; always have some in the freezer. Try them and don’t be afraid to place raw meatballs in a simmering sauce. Yummy!
Kittencal, is there a way to make these in the crock pot?

yes but you would have to bake the meatballs first in the oven then transfer them to the crockpot to cook in a sauce
