Kitten’s Caesar Salad

Notes from our test kitchen; for lower fat option use reduced-fat mayonnaise (not fat-free) and low-fat milk or fat-free half and half, the garlic/dressing flavor will intensify with refrigeration time so a little garlic will go a long way, plan ahead there is a 3 hour chilling time for the dressing

Servings 4-6

Ingredients;

1 large romaine lettuce, chopped
garlic-flavored croutons
fresh grated Parmesan cheese
fresh ground black pepper

DRESSING:

2 anchovy fillets
2 garlic cloves
1 cup Hellman’s mayonnaise (do not use salad dressing)
1/3 cup fresh grated Parmesan cheese
2 tablespoons fresh (not bottled) lemon juice
1 tablespoon Dijon mustard ( Hellman’s Dijonnaise mustard is the best to use)
2 teaspoons Worcestershire sauce
salt and fresh ground black pepper

Instructions:————————————————————

For the dressing; in a small food processor process the anchovy fillets and garlic cloves until minced (this must be done firstly in the processor).

Add in all remaining dressing ingredients; process for about 20 seconds or until smooth and combined (if you prefer a thinner dressing then add in a small amount of milk or half and half cream then process).

Refrigerate the dressing for 3 or more hours before using.

When ready to serve mix the prepared dressing with lettuce and croutons, then sprinkle with Parmesan cheese if desired, season with black pepper.
