Kitten’s Easy One-Bowl Cinnamon Brunch Cake
The addition of chopped apples, raisins, blueberries may be added into the batter for extra flavor, the egg may be omitted but the texture will not be as light, do not make this in one 8 or 9-inch pan the batter will run over the sides
Servings 12
INGREDIENTS:
1-1/4 cups milk
1 large egg
2 teaspoon vanilla or 1 teaspoon almond extract
1-1/4 cups sugar
2 cups all-purpose flour
3 teaspoons baking powder
1/8 teaspoon salt
Topping:
1/2 cup brown sugar
1-1/2 teaspoons cinnamon
1/4 cup melted butter
chopped walnuts or pecans (optional)
INSTRUCTIONS:—————————————–
Preheat oven to 350 degrees F.
Grease two 8 or 9-inch round cake pans or one 13 x 9-inch baking pan.
In a medium or large bowl combine the milk, egg and vanilla and sugar; add in the flour, baking powder and salt, gently mix using a wooden sppon until just combined (careful not to overmix).
Pour into prepared pan/s.
Sprinkle the brown sugar and cinnamon over the top, then drizzle the melted butter over the brown sugar/cinnamon.
Top with chopped nuts if using.
Bake for 20–25 minutes for 8 or 9-inch round pans, and about 30 minutes for 13 x 9-inch pan.
