Kitten’s Chocolate Buttercream Frosting

This is much better than any canned, choose the amount of cocoa for a light, medium or dark chocolate flavor

Notes from our test kitchen; for extra fluffy frosting add in 1-1/2 cups thawed Cool Whip topping beating on low speed until combined

Yield 2 cups

Ingredients:

1/2 cup butter, room temperature
2-2/3 cups confectioners sugar, sifted (must be sifted)
1/3 cup half and half cream or milk
1-1/2 teaspoons vanilla

CHOOSE ONE OF THE FOLLOWING, cocoa must be sifted :

for light use 1/3 cup unsweetened  baking cocoa
for medium use 1/2 cup unsweetened baking cocoa
for dark use 3/4 cup unsweetened baking cocoa

Instructions:

Cream the butter in a medium bowl for for about 3 minutes.

Add in desired amount of sifted cocoa powder,  cream, vanilla and confectioners sugar; beat using an electric mixer until smooth (because of the different amounts of cocoa more cream or confectioners sugar may have to be added in order to achieve desired texture)

    After taking quite a bit of a hiatus from cooking who should I turn to but our very own reliable kittencal again. I used this to ice your deep dark chocolate cake for hubby’s birthday. Since hubby suffers from an acute case of a sweet tooth iced half of the cake in light and half in the medium version. The cake turned out fabulous and echoing everyone else on zaar, this outdoes any of the professional stuff. Needless to say this was passed on to at least a dozen or so guests. So, so yummy.

    I used this frosting on Kitten’s chocolate zucchini cake and it was awesome! Used the half and half, forgot to sift the confectioners sugar, and used the 1/2 cup of cocoa. Didnt add the Cool Whip but my frosting was that texture and tasted great. Will not be using canned chocolate frosting from the store anymore!

    Hi! I’m looking for a no-refrigeration chocolate frosting for a bake sale i’m joining. Can I mnake this with shortening instead of butter? Will it still turn out okay? Thanks! :)
