Chocolate Chewy Cookies

These are chocolate heaven they bake out soft and chewy and are one of my favorites, for a brownie-like texture try not to over bake, make certain to serve these with a tall glass of cold milk :)

Yield 30-35 cookies

INGREDIENTS:

2/3 cup room temperature shortening

1-1/2 cups packed brown sugar

1 tablespoon water

2 teaspoons vanilla

2 eggs

1-1/2 cups all-purpose flour

1/3 cup sifted baking cocoa

1/2 teaspoon salt

1/4 teaspoon baking soda

2 cups semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans

INSTRUCTIONS:——————————————–

Preheat oven to 350 degrees F.

In a large bowl cream the shortening with brown sugar, water and vanilla until blended.

Add in eggs and continue beating until fluffy and combined

In a small bowl combine the flour with cocoa, salt and baking soda; add to the creamed mixture and beat until combined.

Mix in the chocolate chips and nuts.

Drop by rounded teaspoonfuls onto a greased cooking/baking sheet.

Bake for 7-9 minutes (do not over bake).

    This was my first time baking cookies hence a few lessons learnt in the process. While the taste was spot on as usual I made the mistake of trying to remove them while still warm which resulted in a few of them cracking and crumbling. Thinking they weren’t quite done yet I dunked them into the oven for another couple of minutes which compromised the chewy texture. Moreover I had no clue as to how much thickness/size would be ideal and probably made them too thin. Next time i would not press them so thin and cool them in the tray for a good 5-6 minutes before trying to remove them for a perfect texture. The family loved them regardless. Thanks for another great recipe Kitten. I don’t know what I’d do in the kitchen without you :)
