Oven Baked Barbecued Chicken
If you can’t grill outdoors this is the next best thing!
There are very few ingredients to this recipe but the chicken bakes out so delicious, it’s the rack-in-the-pan method that is used and really makes all difference to the flavor, so you will need a rack that will fit into a baking sheet to make this chicken, I use my Kitten’s Barbecue Sauce that is posted on this site, Sweet Baby Ray’s will work great or use your own favorite, I have stated 2 cups BBQ sauce more won’t hurt and save a little to baste the chicken towards the end of cooking
Notes from our test kitchen; if you are using frozen thawed chicken pieces make certain to hand-squeeze out as much moisture as possible from the chicken before starting this recipe
Servings 4-6
Ingredients:
1 whole chicken, cut into pieces (about 3 to 3-1/2 pounds, for best flavor do not remove the skin)
seasoned salt
freshly ground black pepper
garlic powder
2 cups prepared favorite barbecue sauce (more for basting the chicken the last 30 minutes of cooking time)
Instructions:
Set oven to 350 degrees (oven rack set to lowest position).
Grease a 15 x 10-inch jelly-roll pan or large baking sheet.
Fit a rack into the pan then grease the rack for easy clean-up.
Pat the chicken completely with paper towels then place skin-side down onto the rack.
Season each piece of chicken with seasoned salt, black pepper and garlic powder; turn the chicken skin-side up and season again.
Cover with foil and bake in a preheated oven for 45 minutes.
Remove from the oven then brush with barbecue sauce on both side (make certain to place the chicken skin-side up again).
Return to oven and bake uncovered for another 30 minutes (although it is not necessary you may baste the top of the skin with more sauce about halfway through cooking)
