		<description>I just wanted to tell you that I work for a Greek Gentleman and on potluck days one of the ladies always brings Greek Salad. (She is Greek of coarse)  I asked her for her recipe but everything is a pinch of this and a pinch of that.....I understand, on my recipes (all low fat, low calorie) that is how I make them also and it would be hard for me to put them on paper.  On Easter, my husband and I (my first year as sister in law) went to his sister&#039;s house &amp; I wanted to take Greek Salad but I could not duplicate Kathy&#039;s special taste so I looked on the internet and your recipe jumped out at me.  My sister in law has had several restaurants and announced after dinner on Easter that she is opening a new one.  For four years I have been going to these family dinners but this was my first as Mrs. and they never comment much about my food, my husband does, he tells everyone, but his sisters.........not much at all.  I doubled your recipe, and took it as a side dish but I took home a clean bowl and only six of us attended.  It was the best Greek Salad that I have ever tasted.  My husband and I have had it for dinner three times since Easter (I added Grilled Chicken).  It is a great recipe and I just wanted to let you know.</description>

		<description>Oh, this is heaven on a plate, the best Greek salad I have ever had or made.  The dressing is perfect and does keep well as long as it is allowed to come close to room temp before using.  I can&#039;t wait to make it again, and again, and again!!  Thank you Kittencal!</description>

Yup!

I reduce the oil to 1/2 cup, only because the flavor of my Trader Joe&#039;s olive oil seems to come through really strong. I make no other changes to the dressing. Just make sure you plan ahead like the recipe says. I didn&#039;t, the first time I made this, and believe me: it is NOT the same dressing if you don&#039;t allow it to marry for 2 hours!

I eat this often after my workouts, so I usually add shredded chicken and 1 sliced boiled egg to the salad for extra protein.  

The dressing keeps well in the fridge, too. I&#039;ve kept it for over a month and it&#039;s still delicious. Simply let it come to room temp while you prepare the rest of the salad, and viola! A little taste of Greece, courtesy of Kittencal herself.

I often joke that I need privacy when I eat this salad... it&#039;s that good! LOL!!!
