Kitten’s Garlicy Italian Breadsticks

These are a delicious soft breadstick and must with a spaghetti dinner, the yield is only estimated it will depend on the size you shape the breadsticks, these freeze well

Yield 14 breadsticks

Ingredients:

1-1/4 cups water, divided (110-115 degrees F)

1 teaspoon sugar

2-1/4 teaspoon dry yeast (1 small package yeast)

3 cups all-purpose flour (more if needed)

1-1/2 teaspoons salt

1-1/2 teaspoons garlic powder

1/4 cup olive oil

TOPPINGS:

1/4 cup olive oil or melted butter

1 teaspoon garlic powder

dried Italian seasoning

kosher salt

Instructions:

Fit a heavy duty stand mixer with kneader attachment.

In a small bowl proof the yeast with 1 teaspoon sugar in 1/4 cup warm water for 8-10 minutes or until foamy (if it doesn’t foam discard and start over).

In the stainless steel mixer bowl combine the  flour with salt, 1-1/2 teaspoons garlic powder, 1 teaspoon sugar and 1/4 cup olive oil.

After the yeast is proofed add to the bowl with remaining 1 cup warm water; start mixing/kneading until a soft smooth dough is formed (kneading time should take about 8-10 minutes).

Remove dough to a surface then cover with a light clean tea towel and allow to rest for 5 minutes.

Gather up the dough and knead for a few seconds (the dough will come together nicely).

Shape into a ball the place in an oiled bowl; cover and allow to rise in a warm place for about 1 hour or until doubled.

Punch down dough then divide into 2 pieces.

Cut the dough into strips then twist each strip into long ropes (make them as large as you like).

Place the ropes onto a greased baking pan/s.

In a small bowl whisk 1/4 cup olive oil or melted butter with 1 teaspoon

garlic powder, then  brush over each dough rope.

Sprinkle with Italian seasoning then sprinkle lightly with kosher salt.

Allow the sticks to sit uncovered at room temperature  in the baking

sheet for about 15 minutes.

Bake in a preheated 375 degree F oven for 15-20 minutes or until lighly

golden brown.
