Cheesy Rice Crust

Notes from our test kitchen; the amounts listed is enough to cover up to a 10-inch deep-dish pie plate

Total oven baking time for this crust should be no more than 30-35 minutes

Ingredients:

2 cups uncooked white long grain rice

1 large egg, beaten

1/2 teaspoon garlic powder

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese or cheddar cheese

salt and fresh ground black pepper (optional)

Instructions:—————————————-

In a saucepan cook the rice with water according to package directions and cooking only a slightly firmer texture (see my medium rice option) transfer to a bowl and cool to room temperature.

Mix in egg, Parmesan cheese, mozzarella cheese, salt and pepper to taste; mix to combine.

Press the mixture into bottom and up sides of either an 8 or 9 or 10-inch pie plate.

Bake in a preheated 350 degree oven for 5 minutes (just enough to set the crust) remove and cool.

Add in desired fillings and bake second-lowest oven rack for no more than 25-30 minutes at 350 degrees F.
