Kitten’s Greek Omelete
If you are a lover of Greek food then give this a try, yes baking powder you did read right this is the secret to fluffy eggs!

Servings 2
Ingredients:
1-2 tablespoons olive oil or butter (or use a little of each)
large handful of fresh baby spinach leaves
4 extra-large eggs (can use large eggs)
2 tablespoons whipping cream (can use light cream)
1/8 teaspoon dried oregano (rubbed between fingers to release the flavors)
fresh ground black pepper and salt
1/4 cup crumbled feta cheese
1/4 cup sliced kalamata olives (or use regular black olives)

In a bowl whisk the eggs with cream, baking powder, oregano, black pepper and a pinch of salt; allow to sit for 5-10 minutes.
Meanwhile in a medium skillet melt the butter over medium heat until sizzling; add in spinach stir until wilted (this will not take long) remove to a plate.
Re-mix the eggs another time then add to the hot skillet; cook without stirring for 3 minutes or almost set, gently lifting the edges of the eggs using a spatula to allow any uncooked egg to flow underneath.
On one side of the omelete sprinkle the sauteed spinach, feta cheese and olives.
Lift the uncovered half over the cheese and olives and cook for another 2-3 minutes.
Slice onto a plate.
