Quick and Easy Refigerator Blueberry Jam

This jam takes only minutes to make but will need some chilling time to thicken up, I haven’t tried this yet with all strawberries although I think it would work well also, I do know using all blueberries or a mixture of blackberries and blueberries works great and using 4 cups raspberries worked well also :)

Ingredients:

4 cups fresh or frozen blueberries

2 cups white sugar

1 (3-ounce) box lemon-flavored Jell-O  gelatin

Instructions:

In a large saucepan combine all 3 ingredients; bring to a simmer over medium heat stirring breaking up the berries with a potato masher or fork.

Reduce heat to low and  simmer for 4 minutes continuing to break up the fruit.

Cool transfer to glass jars, cover and refrigerate for at least 8 hours before using.

Store any leftovers in the refrigerator.

    Kitten I am so proud of myself!!! I’ve never tried making any kind of jelly or jam, don’t ask me why. My mother would can anything she could get her hands on. I think she did something with lemons even. This turned out so well.I had about the right amount of blueberries in the freezer, just waiting to find a use for them. lol I kept waiting for something to go wrong (my luck)lol! The recipe was so easy to understand, took only minutes, which was stated, turned out perfectly, and is delicious! Great recipe Kitten!

    Oh wow that is so good to here Di, good for you now you can make homemade jam all the time even in the winter as this can also be made using frozen berries… thank you for trying the recipe and leaving your comments!

    this recipe works great with Rhubarb too! I had a bunch to use up and wanted to try a couple of different methods — soo… Kittencal to the rescue! This worked great! Thanks Kitt! This is a winner!!!
