Ground Beef Tomato Penne Skillet

A delicious budget-friendly meal that will please the whole family!

This also works well using bulk pork sausage meat such as Jimmy Dean’s, or 1 pound Italian sausages with casings removed in place of the ground beef, make this as spicy as you like by adjusting the chili flakes I have left them as optional you may omit if desired, I have listed canned mushrooms you may of coarse use fresh sauteed, don’t omit the bacon, it is what adds the flavor to this recipe….

You will need a large skillet for this

Servings 6

INGREDIENTS:

1/2 pound uncooked bacon, chopped

1 pound ground beef

1 medium onion, chopped

1 green bell pepper, seeded and chopped

4-6 garlic cloves, minced (garlic lovers use lots!)

1/2 teaspoon crushed chili flakes, optional or adjust to heat level

2 (10-ounce) cans condensed tomato soup, undiluted

1 (14-ounce) can tomato sauce

1-2 tablespoons brown sugar

1 cup water, more if needed

1 (10-ounce) can sliced mushrooms, drained

salt and fresh ground black pepper, to taste (I use seasoned salt)

1/2 to 3/4 pound dry penne pasta

2 cups shredded mozzarella cheese, or to taste

INSTRUCTIONS:————————————–

In a large skillet cook the chopped bacon until browned and crisp; drain fat (or you may leave it in the skillet and drain after) remove the bacon to a plate.

To the same skillet add in ground beef, onion, bell pepper and garlic; cook until no longer pink; drain fat and continue cooking until the meat is browned (this may take about 8-10 minutes).

Return the bacon back to the skillet along with the 2 cans of tomato soup, tomato sauce, 1 tablespoon brown sugar, water and mushrooms; bring to a simmer over medium heat stirring constantly.

Season with salt and black pepper.

Reduce heat to low and simmer uncovered or partially covered for 1 to 1-1/2 hours, the longer you simmer the richer the sauce will be, if the sauce gets to thick  add in more water and continue cooking seasoning once again with salt and pepper if needed about halfway through cooking.

When the sauce has finished cooking, cook the pasta in boiling water until al dente, drain then mix into the cooked sauce.

Top with shredded mozzarella cheese;  place under the broiler heat to melt the cheese if desired.

Serve from the skillet.
