Creamy Baked Spinach Rice
If you like risotto then you will love this!
Notes from our test kitchen; for the best results use Aborio rice, this rice is just as delicious without the spinach
Servings 6
3 tablespoons butter
1 small onion
3 garlic cloves, minced (garlic lovers use more if desired)
4 cups loosely packed fresh baby spinach leaves, roughly chopped (measure before chopping)
1 cup uncooked Aborio white rice
1 (10-3/4-ounce) can condensed cream of mushroom soup
1-1/2 cups chicken broth (can use water or 3/4 cup each)
1 cup milk
1/3 cup fresh grated Parmesan cheese
1/2 teaspoon salt (I use seasoned salt)
1 teaspoon fresh ground black pepper, to taste
Instructions:—————————————-
Preheat oven to 400 degrees F.
Grease a medium casserole dish (fitted with a tight fitting lid).
In a bowl combine the condensed soup with chicken broth and milk, Parmesan cheese, salt and black pepper; whisk vigorously until smooth and well combined; transfer to the casserole dish.
Melt butter in a small to medium skillet over medium-high heat.
Add in onion and saute until transparent (about 4 minutes).
Add in garlic and spinach leaves cook stirring 2-3 minutes.
Transfer the onion/spinach mixture to the casserole dish along with the uncooked rice; stir well to combine.
Cover and bake for 25 minutes.
Remove from oven and stir with wooden spoon.
Return to oven and continue cooking uncovered for another 10-15.
** This is only optional if you prepr a more cheesy flavor at the end of cooking mix in 1/3 cup more of Parmesan cheese

This is my new favorite way to cook rice. It’s simple to do, and the result is so delish! It’s creamy and rich tasting, and eyeball-appealing and the flavor makes it worth fighting over. Oh, and when Kitt says use Arborio rice, she’s not kidding! I used brown rice, which was all I had, and it took 1 1/2 hours to cook. But the end result was still great!
Yummy dish. I made exactly as instructed. We loved it. There is only two of us so I had leftovers. Added a little chicken broth and reheated in the microwave and it was still very good. Next time, I will cut the recipe in half. There will definitely be a next time!
