Kitten’s Garlicy Cornmeal Oven Fried Chicken

This chicken is just as delicious when eaten cold!… plan ahead the chicken needs to soak in the buttermilk for 4 hours

Servings 4-6

Ingredients:

1 whole chicken, cut into pieces (about 3 to 3-1/2 pounds)

2 cups buttermilk

4 large garlic cloves, chopped (or use 1 teaspoon garlic powder)

3 tablespoons melted butter (can use less)

COATING MIX:

1/2 cup dry breadcrumbs

1/2 cup yellow cornmeal

1/3 cup grated Parmesan cheese

1 tablespoon dried parsley flakesĀ  (or can use 3-4 tablespoons fresh minced)

2 teaspoons garlic powder (can use more)

1/2 teaspoon seasoned salt (or use 1/2 teaspoon white salt)

1/2 teaspoon fresh ground black pepper (can use more)

1 teaspoon onion powder

1/2 teaspoon dried thyme (rubbed between fingers to release the flavor)

1/8 teaspoon cayenne pepper (optional or adjust to suit heat level)

Instructions:—————————————

Place the chicken pieces in a large bowl (use a bowl large enough to hold the chicken and buttermilk or can use a large heavy resealable bag placed in a bowl to catch any leaks) .

Pour the buttermilk over the chicken then sprinkle the garlic over; using cleans hands mix well to combine.

Refrigerate for 4 hours.

Preheat oven to 375 degrees F.

Set oven rack to lowest position.

Genorously grease a baking sheet with butter or cooking spray.

In a large resealable plastic bag combine all the coating mix.

Remove the chicken from the buttermilk and place in a colander to drain for about 10 minutes (shaking the colander a few times while draining, the chicken should still have a little coating of buttermilk/garlic on it drain just enough so that the buttermilk will not make the coating mix too wet).

Place 1 piece of chicken at a time into the bag and toss to coat in the mixture.

Transfer to the baking pan and repeat with remaining chicken pieces.

Drizzle the melted butter on top of the chicken (I have a spray that I use to spray the butter on over each piece).

Bake for 40 minutes or until cooked through.
