Kitten’s Toasted Turkey Reubens
An easy sandwich for sauerkraut lovers and one that has been enjoyed for many years!
I use my Thousand Island dressing recipe for this but bottled will work fine, I prefer to use pumpernickel bread but rye is also good to use, this also works well using an electric sandwich press… feel free to adjust all amounts to taste
Servings 2
Ingredients:
4 large slices pumpernickle bread
soft butter (to spread on the outside of the bread slices and more for the skillet)
8 tablespoons prepared Thousand Island salad dressing, divided
6 ounces thinly sliced deli smoked turkey
1/2 cup sauerkraut, rinsed under cold water then well drained
fresh ground black pepper
2-4 slices Swiss cheese (can use provolone or mozzarella, Swiss is the best to use)

Spread one side of the four slices of bread with the salad dressing (about 2 tablespoons for each slice, can use more, if desired).
Layer with sliced turkey and sauerkraut.
Sprinkle the top of the sauerkraut with a little black pepper then top with cheese slice/s.
Top with remaining slices.
Lightly butter the outside of all 4 sides of the bread slices.
Melt a small amount of butter in a skillet.
Toast the sandwiches for about 3-4 minutes per side or until lightly toasted adding in more butter to the skillet if needed.
