Cheesy Italian Sausage Pie
I prefer to use spicy Italian sausage mild will work great also, to make this an easy weeknight meal cook the sausage mixture a day in advance and refrigerate, a frozen pie crust makes this easy to put together!
Servings 6-8
Ingredients:
1 (9-inch) deep-dish unbaked pie shell
3/4 pound Italian sausage links, casings removed (mild or spicy)
1/2 teaspoon dried Italian seasoning (rubbed between fingers to release the flavor)
1/4 teaspoon crushed red chili flakes (optional and use only if using mild sausages, can adjust to heat level)
1 small onion, chopped
1/2 green bell pepper, seeded and chopped
3 garlic cloves, minced
1 (4-ounce) can sliced mushrooms, well drained
3 large eggs, beaten
1/2 cup light cream (such as half and half cream)
1 teaspoon fresh ground black pepper, or to taste
salt to taste (I use seasoned salt)
2 cups shredded mozzarella cheese, divided

Preheat oven to 350 degrees F.
Set oven rack to lowest position.
Place empty pie shell onto a baking sheet then bake for 6 minutes; remove and set aside.
In a medium skillet cook the sausage meat with Italian seasoning, onion, bell pepper and garlic until no longer pink (about 10 minutes) drain fat then mix in the mushrooms.
Sprinkle the mixture into the prebaked pie crust.
In a bowl whisk the eggs with cream and black pepper until well combined then mix in 1 cup mozzarella cheese (season with seasoned salt or white salt if desired) pour over the sausage mixture.
Bake 350 degrees F (on a baking sheet) for about 35 minutes or until just set.
Immediately sprinkle the remaining 1 cup shredded mozzarella cheese over the top and allow to melt.
Cool slightly before slicing.
