This sauce takes only minutes to make I’ve been making this for years and I make it often for a quick alfredo sauce, this tends to separate if refrigerated then heated so it’s best to use it the same day it is made… yield is enough for 1 pound of cooked pasta

Yield 2-1/2 cups

Ingredients:

1/2 cup butter, cut into cubes (no substitutes)

2 garlic cloves, minced

1 cup heavy (35%) whipping cream

pinch nutmeg, optional but good to add

1/8 teaspoon dried basil (rubbed between fingers to release the flavor)

1 to 1-1/4 cups freshly garted Parmesan cheese

salt and fresh ground black pepper, to taste

Instructions:—————————————-

Place the butter and minced garlic in a minimum 4-cup microwave-safe bowl (I use my Pyrex measuring cup).

Microwave on HIGH for 2 minutes; remove and stir in the heavy cream, nutmeg, basil and black pepper.

Return to microwave uncovered on HIGH for another 2-3 minutes or until bubbly.

Remove and stir in the Parmesan cheese then return to the microwave for another 2-3 minutes or until thick and smooth.

Season with salt and more black pepper to taste.

This has to be a winner! I wish you had a “recipe box” feature so I could save it. Someday?
