Peanut Butter Oatmeal Chocolate Chip Cookies

Amounts may be doubled

Yield 16-18 cookies

Ingredients:

1/2 cup butter, softened

1/2 cup brown sugar (preferably a mixture of dark and light brown sugar)

1/2 cup white sugar

1-1/2 teaspoons vanilla

1 large egg

1/2 cup peanut butter

1 cup all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup rolled oats

1 cups semi-sweet chocolate chips

Instructions:—————————————-

Preheat oven to 350 degrees F.

Grease a baking sheet.

In a medium bowl cream the butter with both sugars and vanilla until well blended (about 2-3 minutes).

Add in egg and peanut butter; beat until well blended.

In a small bowl combine the flour with baking soda and salt then add to the creamed mixture and beat on low speed until just blended.

Mix in the oatmeal until combined then mix in the chocolate chips.

Drop by tablespoonfuls onto greased cookie sheet.

Bake for about 10 minutes or until edges start to brown.

Cool for about 5 minutes on cookie sheet then remove to wire racks to cool completely.

    Oh Kitten! These cookies are so delicious! I had already dumped all of my dry ingredients except for flour into the bowl when I realized I didn’t have 2 cups of all purpose white flour (yes, I doubled the batch) so I went for it and subbed Whole Wheat PASTRY flour. They are perfect! I did have to increase bake time 2 minutes – likely because of the WW Pastry flour, but they came out beautifully! Thank you Kitt!
