Layered Fresh Fruit Salad

Perfect to serve at a summer get together and I have done so many times and always receive rave reviews!  if you are serving more than 8 people I would suggest to make two bowls or it may be doubled and serve in one large bowl, this may be made hours in advance and refrigerated until ready to serve…

the fruit amounts are only a guideline you may adjust to amount desired and/or use different fruit of choice, it is not recommended to layer the cream cheese mixture between the fruit

Servings 6-8

Ingredients:

1 pint fresh blueberries (pick and any discolored berries and discard)

1 pint fresh strawberries or raspberries, divided

2-1/2 cups fresh pineapple chunks

2 cups watermelon chunks

2 bananas, cut into 1/2-inch slices

2 tablespoons fresh lemon juice

2 kiwi fruit, peeled and diced

1 large orange, peeled and diced (can use 1 can mandarin orange segments, well drained)

2 (3-ounce) packages cream cheese, softened

1/3 cup sifted confectioners sugar

1-1/2 teaspoons lime juice

1 cup heavy whipped cream (measure 1 cup after whipping the cream)

Instructions:

Prepare a large fancy glass bowl (a trifle bowl will work well).

In a bowl toss the banana slices with lemon juice (this will prevent them from browning).

In the large fancy glass bowl in a layering effect place the pineapple in the bottom then blueberries half the strawberries or raspberries, oranges, kiwi fruit, watermelon then remaining strawberries or raspberries.

In a bowl beat the soft cream cheese with confectioners sugar and lime juice until smooth.

On lowest speed mix in the whipped cream until blended.

Pour the whipped cream cheese mixture all over the fruit and allow to drizzle inside of the bowl.

Chill for at least 1 hour before serving.
