Favorite Chewy Coconut Cookies
Taken from my “Favorites” folder!
Notes from our test kitchen; if doubling the recipe make two separate recipes in two bowls, combining a double recipe into one will not produce the best results, do not use any substitutes for the butter it will effect the flavor and texture of the cookies
Yield 30 cookies
Ingredients:
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup plus 2 tablespoons butter, softened (no substitutes!)
1 teaspoon coconut extract
1/2 cup white sugar
1/2 cup light brown sugar
1 large egg
1 egg yolk
1-1/4 cups sweetened flaked coconut
Instructions:——————————————-
Preheat oven to 350 degrees F.
Generously grease a baking sheet.
In a medium bowl using an electric mixer on medium speed beat the butter with both sugars and coconut extract until creamy.
Add in egg and egg yolk and beat until fluffy.
In a small bowl combine flour with baking soda and salt; add to the creamed mixture and mix until combined (batter will be slightly thick).
Mix in coconut until combined.
refrigerate for about 2 hours.
Drop by heaping teaspoonfuls on well greased baking sheet spacing about 3-inches apart.
Bake for 8-10 minutes or until lightly golden brown.
Cool on baking sheets for about 5 minutes then remove to wire rack/s to cool completely.
