This has never failed me yet, it’s one of my favorite chocolate fudge recipes!

For a less sweeter taste you may reduce the sugar by 2 tablespoons but no more or the fudge will not set properly, evaporated milk may be used in place of the light cream but do not use milk, using a good quality chocolate chips will only improve the flavor

Yield 36 small squares

INGREDIENTS:

1-2/3 cups sugar (remove 2 tablespoons for a less sweeter taste)

2/3 cup 18% table cream (or can use full-fat evaporated milk, do not use fat-free half and half or milk)

3 tablespoons butter

1/8 teaspoon salt

2 cups mini marshmallows, slightly packed when measured

1-1/2 cups semi-sweet chocolate chips

1-1/2 teaspoons vanilla

2/3 cup chopped walnuts, optional

INSTRUCTIONS:————————————–

Butter an 8 x 8-inch pan.

In a medium saucepan combine the sugar with cream, butter and salt; bring to a boil stirring constantly (be careful the mixture does not boil over the sides of the saucepan).

Reduce heat to medium-low (more to the low setting) and simmer gently for 5 minutes stirring frequently using a timer set to 5 minutes.

Remove from heat and stir in marshmallows, chocolate chips and vanilla mixing vigorously until smooth and combined (this may take a few minutes).

Mix in nuts, then pour into pan.

Cool to room temperature then refrigerate.

Cut into small squares.

Kitt does this recipe “double” well? Or is it better to make 2 batches?

So easy and simple. Mine took a little longer than 5 minutes to get things going b/f I felt it had reached the soft-ball stage. I did opt to use the chopped walnuts. A great recipe to prepare ahead and freeze for the Christmas holidays.

    Hey Kittencal,
I tried making this fudge, but it never set. It just stayed a thick liquid even when I put it in the fridge. What did I do wrong? It did taste VERY yummy and was great over ice cream.

This is the easiest and best fudge I’ve ever made or eaten. Six batches went through my kitchen this holiday season and each one came out perfect! Kitten, I thank you for another winner even if my jeans don’t fit!!!
