Baked Chicken in Sweet and Sour Tomato Sauce

This will also work well using 6-8 pork chops cut about 3/4-inch thick and browned firstly the amount will depend on the size of your pork chops use as many that will fit into the baking dish without over crowding, I have even made this with hamburger patties browned firstly and then cooked in the sauce…although I have not listed it in the ingredients I also add in some hot chili sauce if you like some extra heat then add it in, Tabasco or cayenne will also do the trick!…

I serve this with fries, cooked rice also works well but the fries are better! :)

Servings 4-6

Ingredients:

8 bone-in chicken thighs

seasoned salt or white salt and fresh ground black pepper

oil and 1 tablespoon butter for skillet browning

1 small onion, thinly sliced

1 small green bell pepper, seeded and chopped

1 (20-ounce) can unsweetened pineapple tidbits, reserving the juice

1 tablespoon cornstarch

2 (8-ounce) cans tomato sauce

3 tablespoons tomato paste (freeze the remainder from the can to use for another time)

1/2 cup brown sugar, packed (increase for a sweeter taste)

1/4 cup cider vinegar

2 tablespoons Worcestershire sauce

2 garlic cloves, minced

1 teaspoon seasoned salt or white salt

1/2 teaspoon fresh ground black pepper, or to taste

Instructions:—————————————–

Preheat oven to 375 degrees F.

Set oven rack to lowest position.

Grease a 13 x 9-inch baking dish.

Season the chicken with seasoned salt and black pepper.

Heat oil with 1 tablespoon butter in a skillet over medium-high heat using enough oil to coat the bottom of the skillet.

Brown the chicken on both sides (about 3 minutes per side) transfer to baking dish.

Sprinkle the sliced onions and bell pepper around the chicken pieces.

Drain the pineapple juice into a medium bowl then sprinkle the pineapple chunks into the baking dish.

To the juice whisk in 1 tablespoon cornstarch until blended, then mix in both cans tomato sauce, tomato paste, brown sugar, cider vinegar, Worcestershire sauce, minced garlic 1 teaspoon seasoned salt and black pepper; whisk vigorously until well blended (taste the sauce and if you prefer a more sweeter taste then add in more of brown sugar).

Pour the sauce over the chicken and turn the chicken to coat into the sauce making certain that the chicken is skin side up before baking.

Bake uncovered for 1 hour or until the chicken is cooked through.
