Cranberry Nut Snack Cake
Don’t let the small list of ingredients fool you, this makes a great cake if made following the instructions, it also will work with blueberries
Make certain to beat the eggs until thickĀ which may take a few minutes, recipe may be doubled and baked in a 13 x 9-inch baking pan increasing vanilla or almond extract to only 2 teaspoons

Ingredients:
2 large eggs, room temperature
1-1/2 teaspoons vanilla (or can use 1-1/2 teaspoons almond extract)
1 cup sugar
1 cup all-purpose flour
1/3 cup melted butter
1-1/4 cups fresh or frozen cranberries
1/2 cup chopped walnuts
Instructions:——————————————–
Preheat oven to 350 degrees F.
Grease an 8-inch baking pan.
In a medium bowl using an electric mixer beat the eggs and vanilla until thick (this may take about 4 minutes).
Gradually add in the sugar beating until well blended (you should beat until no sugar granuals remain).
Stir in flour and melted butter beating on low speed until just blended (even better you can mix it in by hand).
Mix in the cranberries and nuts.
Transfer to baking pan.
Bake for 40 minutes or until the cake tests don.
Cool cut into slices.
