Mexi Salsa Chicken

Don’t forget to serve the chicken topped with cold sour cream! this also works well using bone in and skin on chicken thighs

Servings 2-4

INGREDIENTS:

oil for browning, as needed

4 boneless chicken breasts

4 tablespoons Old El Paso taco seasoning, divided (or use your own favorite)

salt and fresh ground black pepper

2 cups mild or medium salsa (can use more)

2 cups shredded cheddar cheese, or to taste

sour cream

chopped green onions, optional

INSTRUCTIONS:———————————————

Coat each chicken breast with about 1 tablespoon of taco seasoning, black pepper and and a small amount of salt (you can omit the salt).
Heat oil in a medium skillet over medium heat (use enough oil to lightly coat the bottom of your skillet) .
Add in chicken breasts and brown on both sides.
Transfer chicken into a greased 8 x 8-inch baking dish.
Pour the salsa over the chicken pieces.
Bake in a preheated 350 degree F oven for about 25 minutes or until chicken is cooked through.
Remove from oven, and immediately sprinkle with the grated cheddar cheese.
Place back in oven and bake for another 5-6 minutes or until the cheese is melted.
Serve topped with cold sour cream and chopped green onions if desired.
