Baked Nacho Casserole

Servings 4-6

INGREDIENTS:

3 cups coarsely chopped tortilla chips (or can use corn chips, or use as much as you like)

1 pound ground beef

1 medium onion, chopped

3 large garlic cloves, minced

1/2 teaspoon crushed chili flakes, optional or adjust to taste

1 (1-1/4 ounce) package taco seasoning (such as Old El Paso)

3/4 cup water (or use amount of water stated on the taco seasoning package)

1 (15 ounce) can refried beans

2 cups shredded cheddar cheese, divided

1 cup salsa (mild, medium or spicy)

2 green onions, chopped

1 (2-1/3 ounce) can sliced black olives

1 large tomato, chopped

INSTRUCTIONS:———————————–

Preheat oven to 375 degrees F.

Set oven rack to lowest position.

Grease an 8 x 8 or a 9 x 9-inch baking pan.

In a skillet cook the ground beef until no longer pink; drain.

Add in the onion, garlic and chili flakes; continue cooking until the beef is browned (this may take 10-12 minutes to brown the beef).

Add in the taco seasoning mix and 1/4 cup water; simmer for about 5 minutes stirring; remove from heat

Sprinkle the tortilla chips into the bottom of the pan.

Heat the refried beans on top of the stove or in microwave until hot, then mix in 1 cup shredded cheese and 1 cup salsa until well combined.

Pour bean mixture over corn chips in dish, then sprinkle the cooked ground beef over the beans.

Sprinkle remaining cheese over top of the beef, then the green onions and black olives over cheese.

Bake until the cheese is melted.

Remove from oven then sprinkle chopped tomatoes on top.
