Company’s Coming Cheesy Spinach Egg Bake

If you are serving more than 6 people I would suggest to make two separate recipes in two casserole dishes
Taste Tester Notes; a great addition is pinch of cayenne pepper
SERVINGS 6
INGREDIENTS:
3 tablespoons butter
1 small onion, chopped
3 large garlic cloves, minced
8 large eggs
1 (10 ounces) package frozen chopped spinach (cooked according to package directions then hand- squeezed dry)
1-1/2 cups shredded mozzarella cheese
1 cup (4 ounces) crumbled blue cheese, divided
2 plum tomatoes, diced
1/2 teaspoon fresh ground black pepper, or to taste
1/4 cup chopped walnuts
1 plum tomato, sliced, optional
INSTRUCTIONS:——————————————-
Preheat oven to 400 degrees F.
Grease a 1-quart baking dish.
In a skillet melt butter over medium heat; add in onion and garlic, then cook stirring for about 3 minutes or until softened.
In a bowl lightly beat eggs with a whisk; stir in onion mixture, spinach, mozzarella cheese, 3/4 cup blue cheese, diced tomatoes , black pepper and walnuts.
Transfer to greased baking dish.
Bake uncovered for 30-35 minutes or until a knife inserted near the center comes out clean.
Sprinkle the remaining 1/4 cup blue cheese over the hot casseroles, then layer sliced tomatoes over the top.
