Extreme Orange Poke Cake With Fluffy Orange Frosting
For lime cake use lime Kool-Aid and lime Jell-O in place of the orange flavor

INGREDIENTS:
1 (18-1/4 ounces) package lemon cake mix
1 envelope unsweetened Kool Aid orange soft drink mix
1 cup diet 7-Up or Sprite (or can use water, orange flavored water will work well)
3 eggs
1/3 cup vegetable oil
2 (3 ounces) packages orange Jell-0 gelatin, divided
1 cup boiling water
1 cup cold water
FROSTING:
1 cup cold light cream (such as half and half, can use full-fat milk)
1-1/2 teaspoons vanilla extract
1 (3.4 ounce) package instant vanilla pudding mix
1 carton (8 ounces) frozen Cool Whip topping, thawed
INSTRUCTIONS:————————————————-
In a large bowl, combine cake mix, Kool Aid drink mix, 7-Up or water, eggs and oil; beat on low speed for 30 seconds, then beat on medium for 2 minutes.
Pour into a greased 13 x 9-inch baking pan.
Bake in a preheated 350 degrees F oven for 25-30 minutes or until a toothpick inserted near the center comes out clean.
Using a small-holed straw poke holes all over in the warm cake, then cool on a wire rack for 30 minutes.
Meanwhile in a large bowl dissolve one package of gelatin in boiling water, then stir in cold water; Pour evenly all over the top of the cake.
Refrigerate until completely cold (about 4 or more hours, if you are refrigerating more than 4 hours cover with plastic wrap).
For frosting; in a large bowl, combine the light cream with vanilla, pudding mix and remaining one package of Jell-o gelatin; beat on low for 2 minutes, then allow to stand for 5 minutes.
Using a spatula fold in the Cool Whip topping until thoroughly blended.
Refrigerate until ready to use.
