Fat-Free Jumbo Blueberry Muffins
A delicious fat-free muffin with about 162 calories and 0 fat!
Test Kitchen Notes; can be baked in regular size muffin tins for 20-22 minutes
YIELD 6 jumbo muffins
INGREDIENTS:
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder (not scant, use a good teaspoon of baking powder)
1/2 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons grated lemon zest (can use more)
2 cups fresh blueberries
1 large egg
1/2 cup fat-free sour cream (or can use fat-free plain, vanilla or blueberry yogurt)
1/4 cup fat-free milk
3 tablespoons applesauce
1-1/2 teaspoons almond extract
INSTRUCTIONS:——————————
Preheat oven to 350 degrees F.
Set oven rack to second-lowest position.
Line 6 jumbo size muffin tins with paper liners or coat with non-stick cooking spray.
In a small bowl combine the flour with sugar, baking powder, salt and lemon zest, then mix in the blueberries.
In a medium bowl whisk egg, then whisk in sour cream, milk applesauce and extract; pour into the dry mixture, then using a small spatula fold into the dry ingredients until just combined (do not over mix!)
Spoon batter into muffin tins filling almost to the top.
Bake for 25-30 minutes or until muffins test done.
