Broccoli-Sausage Egg Brunch Casserole
Kitchen Notes; you may want to make two casseroles if you are serving more than 6 people, this may be completely assembled and refrigerated until ready to bake, fresh steamed broccoli is recommended to use

INGREDIENTS:
8 ounces bulk pork sausage
1 small onion, chopped
1 small broccoli head, cut into small florets then steamed (or can use one 10-ounce package frozen broccoli thawed and well drained, I prefer the fresh)
2 cups shredded cheddar cheese, divided
1 cup ricotta cheese
8 eggs, lightly beaten
1/4 cup light cream (can use milk)
1 teaspoon fresh ground black pepper
pinch cayenne pepper
salt, optional and to taste
1 large Roma tomato, sliced
1/2 cup freshly grated Parmesan cheese (optional can use in place of shredded cheddar cheese)
INSTRUCTIONS:———————————-
Preheat oven to 350 degrees F.
Set oven rack to lowest position.
Grease an 11 x 7-inch baking dish.
Cook the sausage meat with onion in a skillet over medium-high heat until browned; drain fat; transfer to a large bowl, cool slightly then mix in the broccoli florets and 1/2 cup shredded cheddar cheese; set aside.
In another bowl combine 1/2 cup shredded cheddar cheese with ricotta cheese, eggs, light cream, black pepper and cayenne; mix to combine, then season with salt if desired.
Spoon the sausage mixture into baking dish, then top with the ricotta mixture over the top.
Sprinkle with remaining 1 cup cheddar cheese or 1/2 cup Parmesan cheese.
Arrange the tomato slices neatly over the top.
Cover with foil and bake 30 minutes.
Uncover and continue baking for another 15 minutes.
Allow to stand 10-12 minutes before serving.
