Lemon Cookie Crispies

Test Kitchen Notes; drizzle the tops of the cookies with melted white chocolate chips after the cookies are cooled if desired, yellow food coloring may be added for a light yellow color

Yield 4-1/2 dozen

INGREDIENTS:

1-1/3 cups butter, softened

2 cups confectioners sugar, sifted

1 tablespoons fresh lemon juice

1-1/2 tablespoons grated lemon peel (can use more)

1 teaspoon vanilla

3 cups all-purpose flour

1/3 cup white granulated sugar

INSTRUCTIONS:—————————————

Preheat oven to 325 degrees F.

Lightly grease a large cookie/baking sheet.

In a large bowl cream butter with confectioners sugar until light and fluffy.

Beat in the lemon juice, peel and vanilla.

Gradually mix in flour until combined.

Shape dough into 1-inch balls.

Place 2-inches apart on baking sheet.

Coat the bottom of a glass with cooking spray then dip in granulated sugar.

Flatten cookies with glass redipping in sugar as needed.

Bake 11-13 minutes or until edges are lightly browned.

Remove to wire racks to cool.
