Cottage Cheese Potato and Sausage Bake

The cottage cheese is what makes this so moist! one pound of bacon can be used in place of the sausage meat, for best flavor use cheddar and Swiss cheese…you will love this!

Servings 8

INGREDIENTS:

1 pound spicy bulk pork sausage

1 medium onion, chopped

1 small green bell pepper, seeded and chopped

3 garlic cloves, minced (can omit)

6 large eggs, lightly beaten

4 cups frozen shredded hash brown pota

1-1/4 cup shredded Swiss cheese

1-1/2 cups 4% cottage cheese (a few more tablespoons won’t hurt)

INSTRUCTIONS:——————————————-

Preheat oven to 350 degrees F.

Grease a 13 x 9-inch baking dish.

In a large skillet cook the sausage meat with onion and bell pepper until meat is lightly browned.

Add in garlic; cook for 2 minutes.

In a large bowl combine the remaining ingredients; stir in the sausage mixture.

Transfer to baking dish.

Bake uncoveredfor 35-40 minutes or until a knife inserted near the center comes out clean.

Let stand for 10 minutes before cutting.
