Easy Pick Your Flavor Refrigerator Pie (Lower Fat)

Posted for Low-Fat Tuesday…I don’t have the nutritional facts for this one

Test Kitchen Notes; for extra fruit flavor add in some Kool-Aid drink mix powder

Servings 8

INGREDIENTS:

1 (4-serving) size box sugar-free gelatin (choose any flavor)

2/3 cup boiling water

sugar, optional

ice and water to measure 1 cup

1 (8 ounce) container reduced-fat Cool Whip topping, thawed

1 (9-inch) reduced fat graham wafer pie crust

INSTRUCTIONS:—————————-

In a heat proof bowl combine 2/3 cup boiling water with gelatin and if using,  sugar; mix until no granules remain.

In a cup combine water with ice cubes to measure 1 cup; add to the gelatin mixture and mix until the ice cubes have melted.

Stir in the Cool Whip topping until thoroughly combined; chill for 25 minutes or until slightly thickened.

Transfer to pie crust.

Refrigerate for 8 hours or overnight
