Easy Cherry Snack Cheesecake
Plan ahead this needs at least 6 hours chilling time before serving

INGREDIENTS:
2 cups graham cracker crumbs
1/4 cup sugar
1/4 cup soft butter
2 (8 ounce) package cream cheese, softened
3/4 cup sugar
3 large eggs
1-1/2 teaspoons vanilla
12 to 15 maraschino cherries, chopped
1/2 cup crushed well-drained pineapple
INSTRUCTIONS:——————————
Preheat oven to 350 degrees F.
Grease an 8 x 8-inch baking pan.
In a bowl combine the graham cracker crumbs with 1/4 cup sugar and soft butter (reserve 3/4 cup for the top) pat the remaining crumbs into bottom of the baking pan.
In a medium bowl beat cream cheese with sugar, eggs and vanilla until smooth.
Fold in the chopped cherries and crushed pineapple.
Pour over crust.
Sprinkle with reserved 3/4 cup cracker crumbs.
Bake 35 minutes.
Cool slightly then refrigerate for at least 6 hours.

Sometimes you just can’t wait:) I found that 4 hours chilling time works pretty well too. This is a really yummy and quick cheesecake, and I doubt it will last the weekend!
