Spicy Grilled Corn And Jalapeno Dip

Taken from my “Favorites” folder!

In place of grilled corn you cab use two 12-ounce cans corn niblets, well drained —spread on a greased baking sheet, bake 350 degrees F for about 20 minutes or until golden stirring a few times

To save time you can grill the corn days in advance and refrigerate until ready to use, one small can of green chilies may be added

Serve with tortilla chips

Servings 6-8

INGREDIENTS:

6 medium ears of corn, husks removed

1 medium onion, chopped

1 to 2 jalapeno peppers, seeded finely chopped (use 2 for extra spicy)

3 tablespoons butter

1 tablespoon oil

3 garlic cloves, minced

1 semi-heaping cup mayonnaise (such as Hellman’s mayonnaise, do not use salad dressing)

1/2 semi-heaping cup sour cream

1/2 teaspoon chili powder

2 cups shredded Monterey Jack cheese (or can use cheddar cheese)

Louisiana hot sauce, optional and to taste

sliced black olives, drained (use as much as you like)

2 to 3 green onions, chopped

INSTRUCTIONS:——————————-

Grill corn covered over medium heat for 10-12 minutes or until tender, turning occasionally.

Using a sharp knife cut corn from cobs (at this point you can refrigerate the corn until ready to use —  or you can assemble the complete recipe and refrigerate until ready to bake)

In a large skillet saute the onion and jalapeno in butter and for 2-3 minutes or until almost tender.

Add corn and garlic; saute 1-2 minutes longer or until vegetables are tender; remove from the heat.

In a large bowl combine the mayonnaise with sour cream and chili powder.

Stir in the shredded Monterey Jack cheese and corn mixture.

Add in Louisiana hot sauce to taste (if using).

Transfer to a greased 2-quart. baking dish or a deep-dish 9 or 10-inch pie plate

Bake uncovered in a preheated 400 degree F oven for 25-30 minutes or until bubbly and golden brown.

Sprinkle olives and green onions over the top.

Serve hot or warm with tortilla chips.
