Creamy Orzo

Servings 4-6

INGREDIENTS:

2 cups uncooked orzo pasta

1/3 cup butter

1 small onion, finely chopped

2 garlic cloves, minced (garlic lovers can use more)

1/4 teaspoon cayenne pepper, optional or adjust to taste

1/2 cup freshly grated Parmesan cheese

1/4-1/3 cup light cream (such as half and half or 18% table cream)

2-3 tablespoons chopped fresh parsley

salt and fresh ground black pepper, to taste

INSTRUCTIONS:————————————–

Cook the orzo according to the package directions; drain well.

In a large skillet melt the butter over medium heat; add in the onion and saute until just softened (about 3-4 minutes).

Add in fresh garlic and cayenne the last 2 minutes of cooking.

Reduce the heat to low and add in the cooked orzo, Parmesan cheese,  cream, parsley and salt; toss to heat through.

Season with fresh ground black pepper to taste.

Pass more Parmesan cheese at the table.

    This was fantastic! I used the optional cayenne to kick it up a notch. DH and I really enjoyed – and DH is not very fond of many pasta/rice dishes. Another Kitten Keeper!
