Greek Cherry Tomato And Fresh Herb Salad With Feta

Plan ahead the prepared salad must sit for about 30 minutes before serving

Servings 4-6

INGREDIENTS:

3 pints cherry tomatoes

1 large red onion, thinly sliced

1/4 cup white wine vinegar

6 tablespoons olive oil (can increase to 1/2 cup)

1 teaspoon salt and freshly ground black pepper, or to taste

1 small garlic clove, minced

1/4 cup chopped fresh basil leaves

1/4 cup chopped fresh parsley leaves

feta cheese(cubed into about 3/4-inch cubes, about 1 to 1-1/2 pounds)

INSTRUCTIONS:—————————————

Cut the tomatoes in half and place them in a large bowl, then mix in the sliced onion.

In a small bowl whisk vinegar with olive oil, salt, pepper, basil, parsley and garlic; add to tomatoes and toss well.

Dice the feta in 1/2 to 3/4-inch cubes (crumbling it as little as possible) then gently fold it into the salad, then season with more salt and fresh ground black pepper if needed.

Allow to sit for about 25-30 minutes at room temperature.

    Made this tonight – it is wonderful! The mint in the dressing is sublime. Best part was I was able to walk around in my own garden and harvest most all of the veggies and herbs to make it – only had to use purchased lettuce and the red onion. My lettuce has bolted!!

    I made this lovely recipe for lunch today, cut it back to one serving and let it rest for 1 hour before enjoying it. Loved the basil/parsly combination
