Baked Chicken Mozzarella Risotto

Servings 6
INGREDIENTS:
2 tablespoons butter
2-1/2 cups chicken broth
1 cup uncooked Arborio rice (short-grain)
1/3 cup finely chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 cups chopped cooked chicken
1 (8 ounce) package mozzarella cheese, cut into 1/2-inch cubes
1 cup cherry tomatoes, halved
INSTRUCTIONS:—————————————-
Preheat oven to 400 degrees F.
Place butter in a 13 x 9-inch baking dish; bake 5 minutes or until melted.
Remove the hot pan from the oven and stir in broth and next 5 ingredients.
Return to oven and bake uncovered for 35 minutes.
Fluff the rice with a fork then stir in chicken, mozzarella cheese and tomatoes.
Serve immediately.
