Broiled Tomatoes And Feta Cheese

An easy and delicious way to use up garden tomatoes!

Servings 6

INGREDIENTS:

6 large ripe plum tomatoes

salt and fresh ground pepper to taste

1/2 teaspoon dried Italian seasoning

crumbled feta cheese (use as much as you like)

prepared Italian dressing (use as much as you like)

INSTRUCTIONS:————————————-

Cut tomatoes in half lengthwise.

Place cut sides up on a baking sheet.

Sprinkle evenly with salt and pepper to taste.

Using your fingers lightly rub the Italian seasoning over the top of each tomato, then sprinkle with feta cheese (you do not need too much Italian seasoning).

Drizzle evenly with Italian dressing.

Broil 3 inches from heat 2 to 3 minutes or just until cheese starts to brown.

    What a treat! Easy to put together, adds lovely colour to your plate and they taste delicious. Perfect recipe for a Brunch Buffet. Thanks Kitt this a saver recipe.

    Thanks to Bergy who brought this recipe to my attention, I made these today for a light lunch and served them with crusty French bread! OMG! They were SO easy to prepare and the taste was DIVINE! I loved the Italian seasoning with the Feta cheese and my tomatoes were lovely and juicy and fresh…….not plum tomatoes, but big beefsteak tomatoes, so full of flavour. A REAL keep of a recipe for me, many thanks Kitten. Photos to be posted, if you wish! Karen/FT

    Forgot to add, I used fresh oregano leaves to garnish which were great when eaten with the feta tomatoes and all the yummy juices!
