Kitten’s Chicken Cordon Blue

Have your deli thinly slice the ham and cheeseĀ  or you may have problems rolling the chicken, the rolls may be made in advance to bake later

Servings 2-4

INGREDIENTS:

4 skinless, boneless chicken breasts, pounded thin

8 thinly sliced Swiss cheese or mozzarella cheese

4 thinly sliced proscuitto ham or thinly sliced regular cooked ham

1/2 cup melted butter

1 cup dry bread crumbs — mixed with, 1/4 cup freshly grated Parmesan cheese, 1/4 – 1/2 teaspoon cayenne pepper, 1/2 teaspoon dried Italian seasoning, 2 teaspoons garlic powder, 2 teaspoons dried parsley, 1/2 teaspoon seasoned salt and 1/2 teaspoon fresh ground black pepper

INSTRUCTIONS:—————————————-
Preheat oven to 350 degrees F.
Set oven rack to bottom position.
Grease an 11 x 7-inch inch baking dish.
In a shallow bowl combine the bread crumbs with Parmesan cheese and 6 spices.
Place the melted butter in a shallow bowl.
Place one cheese slice then one ham slice on top of each breast.
Roll up each breast then secure with a toothpick.
Coat the chickenĀ  roll first in butter then roll in the bread crumb mixture pressing down firmly with hands to adhere the crumbs to the chicken.
Place in baking dish.
At this point you may refrigerate until ready to bake.
Bake for 30 to 35 minutes.
Remove from oven and place 1 slice of Swiss cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted.
Remove toothpicks and serve immediately
