Buttery Coconut Bars

Taken from my “Favorites” folder!

INGREDIENTS:

1/2 cup butter

2 cups light brown sugar, packed

2 large eggs

1 teaspoon coconut extract

2 teaspoons vanilla

1 cup all-purpose flour

2 teaspoons baking powder

1-1/2 cups  sweetened flaked coconut

INSTRUCTIONS:———————————————

Preheat oven to 350 degrees F.

Grease an 11 x 7-inch baking pan.

In a saucepan melt butter in pan;  remove from heat and add brown sugar stirring until the brown sugar is completely dissolved, then cool slightly.

Whisk in eggs, coconut extract and vanilla until well blended.

In a small bowl combine the flour with baking powder; mix into the wet batter until thoroughly combined.

Mix in the coconut.

Transfer to baking dish.

Bake for about 30-35 minutes.

Slice into desired size bars.
