Italian Sicillian-Style Sausage Meatballs

Amounts may be doubled but increase the garlic only slightly or keep the same

INGREDIENTS:

2 slices sandwich bread, cubed

1/4 cup milk

1/3 cup freshly grated Parmesan cheese

1 small onion, finely chopped

3 -4 tablespoons chopped fresh parsley

1 large egg

6 large garlic cloves, minced

1 teaspoon each salt and fresh ground black pepper (I use seasoned salt)

1 pound Italian sausages links, casings removed

1/4 cup chopped pine nuts, toasted (measure 1/4 cup after chopping)

INSTRUCTIONS:———————————————-

In a large bowl combine the bread with milk until the bread is softened(about 5 minutes).

Mix in the Parmesan cheese, onion, egg, parsley, egg, garlic, salt and pepper.

Add in sausage meat and pine nuts; mix with clean hands until just combined.

Shape in about 1-inch meatballs.

Place on a baking sheet and bake at 350 degrees F for about 22-25 minutes (If you are adding to a sauce you do not have to worry about cooking completely).

Add to simmering sauce.
