You may adjust the amount of whiskey I would recommend to start at 3/4 cup, plan ahead this must be refrigerated overnight before serving so make this a day in advance or even better days in advance the longer it is refrigerated the better the flavor will be, it may be stored in the refrigerator for up to 6 weeks, the amounts may be doubled

Ingredients:

1 cup light cream (such as half and half)

1/4 cup heavy  (33-35%) whipping cream

1 (14-ounce) can sweetened condensed milk

1 teaspoon instant coffee granules

2 tablespoons chocolate syrup

1 teaspoon pure vanilla extract (use only pure vanilla)

1 teaspoon almond extract

3/4 cup Irish whiskey, or to taste

Instructions:———————————————

In a blender or food processor combine the light cream with heavy cream, sweetened condensed milk,  coffee granules, chocolate syrup, vanilla, almond extract and 3/4 cup whiskey; blend until very smooth (add in more whiskey if desired).

Store covered in the refrigerator for 24 hours before serving.

Shake very well before serving.

For a fat-free eggnog this is very good and you can drink it without any guilt!… this may easily be doubled

Servings 6-8

Ingredients:

1 (1-ounce) package sugar-free instant vanilla pudding mix

7 cups fat-free milk, divided (or use low-fat milk)

pinch nutmeg

2 teaspoons rum extract or vanilla

sugar substitute, to taste

1 cup fat-free evaporated milk

Instructions:————————————–

In a bowl combine pudding mix with 2 cups fat-free milk, small pinch of nutmeg, rum or vanilla extract and sugar substitute using as much as desired; mix on low speed of an electric mixure until thickened (adjusting the sugar substitute to taste).

Pour into a large container with a tight fitting lid.

Add in 3 cups of milk, cover tightly with a lid and shake vogorously.

Add in the evaporated milk with remaining 2 cups of milk and shake well again.

Refrigerate until ready to use (shaking or stirring once again before serving).

If you live in Canada I have to state that this tastes just like Tim Horton’s Iced Cappuccino!

Servings 3

Ingredients:

1-1/2 cups cold coffee

1-1/2 cups chocolate ice cream

1/4 cup chocolate syrup

crushed ice

whipped cream (about 1/3 cup whipped cream for each glass)

Instructions:————————————–

In a blender combine the coffee with ice cream and chocolate syrup; blend until smooth and combined.

Pour over crushed ice then top with whipped cream.

This yields about 5 cups however I would suggest to double amounts if you are serving more than 3 people, use very strong or double strength brewed coffee for this and plan ahead this needs about 5 hours of freezing time better still make a day in advance! you will need a blender to make this

Servings 3

Ingredients:

2-1/4 cups very strong coffee, cooled

1/3 cup light brown sugar

1-1/2 cups light cream (such as half and half cream)

pinch cinnamon

3-4 tablespoons bourbon whiskey, or to taste

1/2 cup light cream

Instructions:—————————————-

In a bowl combine the cooled coffee with brown sugar, 1-1/2 cups light cream and cinnamon; mix until no sugar granules remain.

Pour into ice cube trays and freeze until firm (about 5 hours).

In a blender blend the frozen cubes with 1/2 cup light cream and the bourbon whiskey.

Pour into glasses.

Keep this handy in you fridge to make iced coffee anytime you want, have lots of ice handy!

Servings 4

Ingredients:

5 tablespoons instant coffee granules

2 cups hot water

1 (14-ounce) can sweetened condensed milk

Instructions:——————————————–

In a jar (that has a lid) combine the coffee granules with hot water until completely dissolved.

Mix in sweetened condensed milk until combined.

Cover and store in refrigerator.

To make iced coffee: in a tall glass with ice combine 2-3 tablespoons prepared syrup with milk until desired taste is acheived (start with about 1 cup milk adding in more to taste).

I love this in the summertime…I find that the larger watermelons not the smaller baby seedless ones have better flavor for this although they do have seeds and you will need to remove all them first, make certain to serve this in well chilled bowls or cups,  I use the plastic freezer bowls the ones that have the gel in them that are kept in the freezer until ready to use

Servings 8

Ingredients:

8 cups cubed watermelon (without the rind and seeds, about 1/4 of a very large watermelon)

1/4 cup lime juice

1/4 to 1/2 cup sugar, or to taste

2 cups cold 7-Up soda drink or Sprite, divided  (or use a similar lemon-lime soda, can use regular or diet)

Instructions:—————————————–

In a blender or food processor blend or process the watermelon, lime juice and sugar until smooth (about 15-20 seconds, do not add in the 7-Up soda)

Pour into a freezer container.

Cover and freeze for about 30 minutes or until the edges start to freeze; stir then return back to the freezer.

Repeat about every 20 minutes or until the mixture resembles a slushy texture (this should take about 90 minutes).

Spoon 3/4 cup of the slush into chilled bowls or cups, the pour in 1/4 of lemon-lime soda.

A delicious refreshing low fat orange drink!

Notes from our test kitchen; although this is best served after it is made although you can refrigerate tightly covered for up to 4 hours stirring occasionally to blend the flavors,  may be reduce to half if desired, if desired you may place a half of a sliced orange into the glass

Yield 4-1/2 quarts or 9 (2-cup servings)

Ingredients:

1 (12-ounce) can frozen pulp-free orange juice concentrate, thawed (do not dilute with water)

2 (2-litre) bottles of Sprite lemon-lime soft drink, well chilled (diet or regular)

1-2 oranges, cut into wedges

chopped ice

Instructions:

Stir together the concentrate with the lemon-lime soda.

Divide into tall glasses that have been filled with ice.

Place an orange wedge on the ebd of each glass
