Yield about 24 rice balls

INGREDIENTS:

2 cups cooked brown rice ( measure 2 cups after cooking)

2 egg whites

1 (10 ounce) package frozen spinach, thawed (hand-squeezed dry)

1/4 cup finely chopped onion (or can use 1 small onion)

1 garlic clove, crushed

3  tablespoons olive oil

1/2 cup Italian bread crumbs

1/2 cup shredded mozzarella cheese (can use a little more)

1 teaspoon seasoned salt

1/2 teaspoon fresh ground pepper (can use more)

melted butter, as needed (or can use olive oil)

marinara sauce, for dipping (optional

INSTRUCTIONS:—————————————

Preheat the oven to 350 degrees.

Grease a baking sheet.

Heat olive oil in a medium skillet over medium heat; add in onion and saute 2 minutes.

Add in garlic and spinach;  continue to saute until most of the moisture is cooked off; set aside to cool slightly.

In a medium bowl mix together brown rice, egg whites, bread crumbs, and mozzarella cheese.

Add in seasoned salt and pepper.

Using clean hands mix in spinach.

Form into golf ball sized rice balls.

Place each rice ball on the prepared baking sheet.

Lightly brush the balls with melted butter.

Bake for 20 to 25 minutes until lightly browned and slightly crispy.

Serve with marinara sauce for dipping if desired.

Garlic Pizza Dough for bread machine will work great also for this

For an extra kick sprinkle some crushed chili flakes on top before baking

Servings 4-6

INGREDIENTS:

1 recipe for Kitten’s Pizza Dough

1/3 cup prepared Italian salad dressing (if your using bottled dressing I suggest to mix it with some olive oil)

1/2 to 1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon dried oregano (rubbed between fingers to release the flavor, do the same with the thyme)

1/4 teaspoon dried thyme

1/2 teaspoon fresh ground black pepper

1-1/2 cups shredded mozzarella cheese (can use more)

1/3 cup grated Parmesan cheese (can use more)

INSTRUCTIONS:———————————–

Prepare the dough recipe as stated (up until the 9th paragraph)

Punch dough down.

Turn onto a lightly floured surface, then pat the dough flat.

Let rest for 5 minutes, then press into a greased 14-inch pizza pan.

Lightly brush the dough with Italian salad dressing.

In a small bowl or cup combine the garlic powder with salt, oregano, thyme and pepper; sprinkle over dough.

Top with mozzarella cheese then Parmesan cheese.

Bake at 450 degrees F for 15-20 minutes or until golden brown.

Serve warm.

Add on some chopped green onions also!

INGREDIENTS:

1 loaf unsliced Italian bread ( use a 1-pound loaf)

1/2 cup plus 2 tablespoons  butter

3 teaspoons garlic powder (can use more)

1 tablespoon dried parsley

1/2 cup freshly grated Parmesan cheese

2 cups shredded mozzarella cheese (can use more or less or can use shredded cheddar cheese)

INSTRUCTIONS:—————————————

Preheat oven to 350 degrees F.

Prepare a 15 x 10-inch jelly-roll pan or baking sheet.

Slice the bread into about 3/4-inch slices.

In the microwave or stove top melt the butter with garlic powder.

Mix in the dried parsley.

Place the bread slices on the baking sheet.

Using a pastry brush generously coat the tops of each slice with the melted butter/garlic mixture.

Sprinkle tops of each slice lightly with Parmesan cheese.

Bake for about 10 minutes or until lightly toasted.

Remove from heat then sprinkle shredded mozzarella or cheddar cheese onto each slice.

Return to oven and bake for another 3-5 minutes or until cheese has melted and the bread is lightly toasted.

Easy and so delicious!

I didn’t post the amounts you can use as much as you like, homemade garlic bread slices may be used in place of the frozen slices, for extra heat sprinkle on crushed chili flakes, if you prefer a more crispier bread then broil the bread slices until golden brown, top with ingredients then broil for a couple minutes

Yield 8 slices

1 (11-1/4) ounce package frozen garlic bread slices, thawed

prepared pizza sauce

sliced pizza pepperoni

canned mushrooms, drained (hand-squeeze out excess moisture)

shredded mozzarella cheese

INSTRUCTIONS:—————————————

Live a 15 x 10-inch baking sheet with foil, then lightly coat the foil with cooking spray.

Place the garlic bread slices on the baking sheet, then spread all slices with pizza sauce, pepperoni, mushrooms then the mozzarella on top.

Broil 3-4 inches from heat for about 4-6 minutes.

Servings 4-6

INGREDIENTS:

1-1/2 pounds ground beef (even better, a mixture of half ground beef and bulk Italian sausage meat)

4 garlic cloves, minced

1 teaspoon seasoned salt

1/2 teaspoon fresh ground black pepper, or to taste

2 (8 ounce) loaves French bread, halved lengthwise

1 (8 ounce) jar Velveeta cheese sauce (remove the sauce to a microwavable-safe bowl and warm in microwave slightly for easy pouring)

1 (4 ounce) can mushroom stems and pieces, drained

3 green onions, chopped

1 (4 ounce) can sliced jalapenos, drained

1 (8 ounce) can tomato sauce

1/2 cup fresh grated Parmesan cheese

4 cups shredded mozzarella cheese

INSTRUCTIONS:———————————————

In a skillet cook beef over medium heat until no longer pink; drain fat.

Add in garlic, seasoned salt and black pepper; continue cooking until meat is browned (about 10-12 minutes).

Place each bread half on a large piece of heavy-duty foil, then spread each slice with cheese sauce.

Top with beef mixture, mushrooms, green onions and jalapenos.

Drizzle with tomato sauce.

Sprinkle with Parmesan cheese, then mozzarella cheeses.

At this point you may wrap in foil then freeze for up to 2 months

When ready to use; unwrap loaves and thaw on baking sheets in the refrigerator.

Bake at 350 degrees F for 18 minutes or until cheese is melted.

Instead of frying these may be baked in a 400 degree F oven for 18-22 minutes or until golden brown, I make these using a triple recipe of my No Cook Pizza/Dipping Sauce

Yield 30 pizza rolls

INGREDIENTS:

4 cups shredded mozzarella cheese (or can use a mixture of cheeses)

7 ounces sliced pepperoni, chopped (can use more)

1 medium green bell pepper, seeded and finely chopped

1 medium red pepper, seeded and finely chopped

1 small onion, finely chopped

1-1/2 cups favorite pizza sauce (I use my own recipe)

30 egg roll wrappers

INSTRUCTIONS:————————————-
In a large bowl combine first 6 ingredients.
Stir in the pizza sauce.
Place a scant 1/4-cup  filling in the center of each eggroll wrapper.
Fold bottom corner over the filling, then fold sides towards center of the filling.
Moisten the remaining corner with warm water and roll up tightly to seal.
In an electric skillet using 1-inch of oil heat oil to 375 degrees F.
Fry the pizza rolls for 1-2 minutes on each side or until golden brown.
Drain on paper towels.
Serve with additional pizza sauce.

To save time you can make the caramelized onions and the creamy spread a day in advance

If you like lots of creamy olive spread you may want to double the ingredient amounts, also you can layer with some sliced Provolove cheese if you like

Yield 12 sandwiches

INGREDIENTS:

2 French Baguettes, sliced in half

1 to 1-1/2 pounds thinly sliced Deli roast beef (or can use home-cooked thinly sliced)

2 (7-1/2 ounce) jars roasted sweet red peppers, drained and julienned

2 (7-1/2 ounce) jars marinated quartered artichoke hearts, drained and chopped

fresh ground black pepper, to taste

Caramelized Onions:

1/3 cup olive oil

3 jumbo onions, chopped (another onion won’t hurt)

1 teaspoon  sugar

1/2 teaspoon salt, or to taste

Creamy Olive Sandwich Spread:

1 (8 ounce) package cream cheese,  softened

1 (3 ounce) package cream cheese, softened

1-1/2 cups ricotta cheese

1 cup pimiento-stuffed olives

1 large garlic clove, minced

1/4 teaspoon cayenne ( or use 1/4  teaspoon fresh ground black pepper)

INSTRUCTIONS:—————————————-

For the caramelized onions (these can be made up to 2 days in advance) in a large skillet heat the olive oil over medium-high heat.

Add in onions, sugar and salt; cook stirring for about 20-30 minutes or until golden brown; set aside or refrigerate until ready to use.

For the cream sandwich spread; in a food processor place both packages of cream cheese, ricotta cheese, olives, garlic and cayenne or black pepper; process until blended, then spread over the baguettes halves.

Layer the two bread bottom halves with roast beef, roasted peppers, artichokes then caramelized onions.

Top with remaining bread halves, then slice each loaf into 6 slices.

Place on a platter,  serve immediately or cover with plastic wrap then refrigerate until ready to serve.
